Again, I can barely call this a recipe… this is basically just work instructions to make dinner in 5-10 minutes!
This is another meal recipe offering of several to come, to be used on ‘one of those busy nights’ when you need a “fast food” meal. For us, this healthy Keto meal replaces what we used to eat…. chemically processed unhealthy “fast food” and can be made even more quickly than we could drive to a restaurant. This one however, requires you to plan a head and start the crock pot (with frozen meat in it, before you head out the door in the morning.)
Keto Carne Asada Instructions;
In the morning I put in a crock pot frozen or fresh thin steaks (carne asada steaks, or breakfast steaks,) for our family I usually use about a pound or a pound in a half. Add a half cup to 1 cup of water, sprinkle 2-3 tablespoons of Mexican seasoning on it. (I make my own and will upload the spice mix recipe in the near future.) Allow this to cook on low all day.
At dinner time — Shred up the meat — put whatever low carb toppings you like (I usually top it with mexican crumbling cheese and cilantro … my husband, Willie, uses salsa or hot sauce and cheddar or hot pepper cheese) and wrap it up in a low carb tortilla. We generally use either Mission Carb Balance or LaBanderita. Or to go even lower carb wrap it up in a Romaine Lettuce Leaf or a Cabbage Leaf. Or just throw it all in a bowl and forget the wrap altogether!
Keto Spanish Cauli-“Rice” Instructions;
Microwave a bag of Riced Cauliflower – the quickest option is to use Green Giant’s Caulirice. Mix with 1 can of diced tomatoes type tomatoes with chilis or Habanero (if you love it really hot,) a of extra virgin olive oil and 1-2 tablespoons of Mexican seasoning. Microwave again if not hot enough.
