Keto Walnut Maple Muffins

IMG_4508These buttery Keto Walnut Maple Muffins are a wonderful grab and go morning option or an easy accompaniment for a light lunch or snack. Everyone in our house loves these Muffins!

Their flavor reminds me of a Sunday morning pancake breakfast or a wonderful fall Maple Cup Cake (minus the cream cheese icing… yummy!)

 

Keto Walnut Maple Muffins:

Preheat the oven to 375 degrees Fahrenheit. Use paper liners in 18 muffin tin cups.

  • 2 cups Almond Flour
  • 1 T. Baking Powder
  • 1/2 t. Salt
  • 1/4 cup Kerry Gold Butter
  • 1/4 cup Swerve¬†or other powdered sweetener
  • 1 t. Vanilla extract
  • 1 t. Maple extract
  • 1/4 cup Sugar Free Maple Syrup
  • 2 large eggs
  • 1/2 cup heavy Cream or heavy whipping cream
  • 1/2 cup chopped walnuts
  • freshly ground cinnamon, nutmeg & clove to taste

Mix wet ingredients until light and fluffy. Add dry ingredients and mix well. Fold in walnuts. Spoon muffin batter into muffin tins and bake 18-20 minutes. Do not over bake!

This makes 18 regular sized Muffins. According to my research it appears each muffin is;

136 calories with 0.7 grams of net carb, 12.7 grams of fat, 3.4 grams of protein. But you should check for yourself to be certain.
