I can’t call this “fast food” because it takes longer than 30 minutes from start to finish. However, it is certainly less than an hour, usually this meal takes about 45 minutes for me from beginning to end. With the bonus of being very easy to make!
Once again, these are really more like work instructions, not exactly a recipe. I have made several modifications to these instructions to please different palettes.
Keto Prosciutto Wrapped Chicken:
- Boneless Chicken Breasts or Thighs (thin sliced if desired)
- Wedges of Creamy Swiss Cheese or Cream Cheese (I actually use the Aldi brand of this however I couldn’t find a reference to it online)
- Paper Thin Sliced Prosciutto
Preheat the oven to 400 degrees. Wrap a jelly roll pan (cookie sheet with a raised edge) in aluminum foil or line it with parchment paper. I usually prefer the foil. Set a wire rack on top of the pan.
Layout 2 pieces of Prosciutto next to each other horizontally. Place the piece of chicken in the middle, vertically. Smear, yes I said smear, an entire wedge of creamy Swiss (or about 1 tablespoon of cream cheese) onto the top of the chicken. Then wrap the Prosciutto around the chicken, like a present so the entire piece is covered.
Place in 400 degree oven and bake until cooked through, and cheese is melted. Usually about 30 minutes for a thin sliced or pounded out piece of chicken, or 40 minutes for a thicker piece of chicken.
According to my counts in MyFitnessPal, 4 ounce thin version of this with chicken breast is 195calories, 14.5 grams of fat, 2 net grams of carbohydrates, and 41 grams of protein.
